Cet article propose d’étudier la diversité des pratiques d’élevage dans les filières fromagères sous indication géographique (IG), au regard des nouveaux enjeux socioéconomiques et environnementaux auxquelles elles sont confrontées. Huit filières ont été étudiées en Savoie et Haute-Savoie, à l’aide d’entretiens semi-directifs auprès de 24 éleveurs. Grâce à la réalisation d’une typologie, les résultats montrent que leurs stratégies d’exploitation sont influencées par deux éléments principaux qui sont le désir de dégager du temps libre et l’importance de leur identité professionnelle. L’ampleur de cette diversité et la tendance à l’intensification mises en avant questionnent l’évolution des cahiers des charges et les stratégies à venir des filières.

Diversity of farming systems under geographical indications in Savoies, France: towards a weakening of this sector?
For a few decades, the farming sector has faced major socioeconomic, societal, and climatic pressures, which has led to strategic changes in terms of practices. This article intends to study the case of the French agricultural sectors of geographical indications (PDO and PGI). The aim is to understand the diversity of practices in those farms and highlight their specifiers. Eight cheese quality chains have been studied in the Savoies territory (France), and 24 farmers were met. The typology realized shows that the desire to gain time and the professional identity of the farmers are key factors underlying the diversity of practices and strategies. The results also show an intensification of practices for some farmers, which interrogates the evolution of the specifications and future adaptation of these quality chains.
